A superfood is a nutrient-rich food considered to be especially beneficial for health and well-being. The list of superfoods is quite extensive so I choose three to focus on. I like fresh ingredients so I picked from those that are currently in season!
1. Apples (Honey Crisps are here)! Since childhood apples have been equated to good health. However, they also contain copper which is an essential mineral that contributes to healthy skin. Perhaps an apple a day keeps the wrinkles away (as an adjunct to botox of course)!
2. Avocados. As it turns out my older and wiser friends were telling the truth. It is harder to maintain a healthy weight after 40, talk about adding insult to injury. So in my typical “all or nothing style” I ramped up my cardio while cutting out grain carbs. Let’s just say… I do not recommend that plan! What does that have to do with avocado? Well, it turns out you can eliminate grain carbs and exercise like crazy as long as you replace the grain carbs with healthy fats like avocado! Voilà!
3. Beets. Beets are long known to stimulate the liver’s detoxification processes. With the holiday season rapidly approaching I thought I’d be proactive with this one!
Here is a yummy appetizer that incorporates 2 of the 3 superfoods!
“Super” Sweet and Savory Tarts
You will need to prep the following:
cut a sheet of thawed puff pastry into small circles, I recommend using a cookie cutter
core an apple and slice as thinly as possible
scrub, peel, and thinly slice a beet
shred some white cheddar cheese
chop fresh thyme leaves
Next assemble as follows:
Spray a cookie sheet with Pam. Place the pastry circles on the sheet. Top each with cheese, 3 apple slices, 2 beet slices, more cheese, salt, pepper, and thyme. Pop into a 400 degree oven for about 15 minutes (give or take) and ENJOY!
